First off I am assuming your are installing vSohere 5.1 (ESXi 5.1) because earlier versions did not support LUNs larger than 2 TB - with that said theoretically with a light I/O load you could do a single LUN and a single VMFS datastore of 9 TB however I would not recommend it - I would break the LUNs into smaller chunks that way you have more control over the I/O that is heating the LUN
